Baked Salisbury Steak Recipe

Ingredients
<br>- 3 pounds lean ground beef
<br>- 1 ½ pounds lean ground pork
<br>- 1 cup tomato - peeled, seeded and diced
<br>- 3  eggs, lightly beaten
<br>- 1  onion, chopped
<br>- 2 tablespoons chopped garlic
<br>- 1 tablespoon salt
<br>- 1 ½ teaspoons black pepper
<br><p></p>Directions
<br>step 1: Preheat oven to 300 degrees F (150 degrees C). Lightly grease a large shallow baking dish.
<br>step 2: In a large bowl, combine ground beef, ground pork, tomatoes, eggs, onion, garlic, salt and pepper. Mix well. Shape into 12 (4-inch) round patties. Place in baking dish.
<br>step 3: Bake in preheated oven for 35 minutes, until evenly brown, and juices run clear. Cook to a minimum of 160 degrees F (73 degrees C).

Ingredients
<br>- 1 onion, chopped
<br>- 1/4 cup vegetable oil
<br>- 1 pound potatoes, peeled and cubed
<br>- 1 teaspoon salt
<br>- 1/2 teaspoon cayenne pepper

<br>- 1/4 teaspoon ground cumin
<br>- 2 tomatoes, chopped
<br><p></p>Directions
<br>step 1: Lightly brown onion in oil in a medium size skillet.

<br>- 3/4 cup chopped fresh basil
<br>- 1 1/2 cups all-purpose flour
<br>- 1 egg
<br>- 1 teaspoon olive oil
<br>- 2 tablespoons water
<br>- 2 1/2 tablespoons all-purpose flour
<br><p></p>Directions
<br>step 1: Using a food processor, process basil leaves until chopped very fine. Add 1 1/2 cups of flour and pulse two or three times, or until combined. Add egg, 1 teaspoon oil, and the water until dough forms a ball shape. If dough seems dry, add a bit more water.  Wrap dough in a piece of plastic wrap which has been coated in a few drops of olive oil. Refrigerate dough for 2 hours.
<br>step 2: Remove dough from refrigerator, and cut into 6 equal size portions. Run pasta though pasta machine, or roll with rolling pin to desired thickness. Use the additional flour to coat pasta while rolling.
<br>step 3: Allow pasta to dry for one hour prior to cooking.
<br>step 4: Cook in a large pot of boiling water until al dente. This should take only a 3 to 5 minutes, depending on the thickness of the pasta.

Grilled Salmon with Habanero-Lime Butter Recipe

Ingredients
<br>- 1/4 cup vegetable oil
<br>- 1/2 cup orange juice
<br>- 3 tablespoons lime juice
<br>- 1 tablespoon tequila
<br>- 1 tablespoon grated lime zest
<br>- 1 tablespoon minced habanero pepper
<br>- 1 clove garlic, minced
<br>- 4 (5 ounce) salmon steaks
<br>- 1/4 cup butter, softened
<br>- 1/4 teaspoon garlic salt
<br>- 1 tablespoon lime juice
<br>- 2 teaspoons minced habanero pepper
<br>- 2 teaspoons grated lime zest
<br><p></p>Directions
<br>step 1: In a bowl, stir together vegetable oil, orange juice, 3 tablespoons lime juice, tequila, 1 tablespoon lime zest, 1 tablespoon habanero pepper, and garlic. Reserve a small amount to use as a basting sauce, and pour the remainder into a shallow baking dish. Place the salmon in the shallow dish, and turn to coat. Cover, and refrigerate for 2 to 4 hours, turning frequently.
<br>step 2: In a small bowl, mix together softened butter, garlic salt, 1 tablespoon lime juice, 2 teaspoons habanero pepper, and 2 teaspoons lime zest. Cover, and refrigerate.
<br>step 3: Preheat grill for medium heat.
<br>step 4: Lightly oil grill grate, and place salmon on the grill. Cook salmon for 5 to 8 minutes per side, or until the fish can be easily flaked with a fork. Transfer to a serving dish, top with habanero butter, and serve.

Catfish Fajitas Recipe

Ingredients
<br>- 2 pounds U.S. Farm-Raised Catfish fillets
<br>- 1 cup lime juice
<br>- 3 cups mesquite or hickory wood chips
<br>- 1 large onion, sliced and separated into rings
<br>- 1 large sweet red or green pepper, cut into strips
<br>- 2 cloves garlic, minced
<br>- 2 tablespoons butter or margarine
<br>- 1/2 teaspoon salt
<br>- 1/4 teaspoon pepper
<br>- 8 flour or corn tortillas, warmed
<br>- For garnish: Salsa, sour cream and lime wedges
<br><p></p>Directions
<br>step 1: Place catfish in a large plastic bag. Pour lime juice over fish. Seal bag and marinate in refrigerator for 1 hour (do not marinate longer; the acid in the lime juice will 'cook' the fish). Soak wood chips in enough water to cover for 30 - 60 minutes.
<br>step 2: Drain wood chips. In a covered grill, test coals for medium-hot heat. Sprinkle wood chips over preheated coals. Lightly brush grill rack with cooking oil. Place catfish on grill rack. Cover and grill directly over medium-hot coals about 5 minutes on each side or until fish flakes easily.
<br>step 3: Meanwhile in a large skillet cook onion, red or green pepper and garlic in butter or margarine until just tender. Stir in salt and pepper. Cut grilled catfish into chunks. Toss with onion mixture. Fill tortillas with catfish mixture. Serve with salsa, sour cream, guacamole and lime wedges.
