Canned Soup Recipe

Ingredients
<br>- 1 (28 ounce) can stewed tomatoes
<br>- 1 (16 ounce) can vegetarian refried beans
<br>- 1 (15 ounce) can whole kernel corn, drained and rinsed
<br>- 1 (15 ounce) can green beans
<br>- 1 (14.5 ounce) can vegetable broth
<br>- 1 tablespoon dried oregano
<br>- 1 tablespoon garlic powder
<br>- salt and pepper to taste
<br>- 1 teaspoon dried basil
<br>- 1 tablespoon dried parsley
<br>- 2 tablespoons dried minced onion
<br><p></p>Directions
<br>step 1: Puree stewed tomatoes in an electric blender or mixer.  Place tomatoes, refried beans, corn, green beans, and vegetable broth in a large pot. Cook over a medium heat.  Refried beans and tomatoes will cook down to create a base for the soup.  Stir occasionally to prevent stickiness.
<br>step 2: Add water as needed to prevent over-thickening.  Add oregano, garlic powder, salt and pepper, basil, parsley, and minced onion. Cover and cook until mixture is heated through.  Add the onions, and continue cooking until the soup is just boiling.

Dipping Sauce for Seafood Recipe

Ingredients
<br>- 1 1/2 cups plain non-fat yogurt
<br>- 1/3 cup honey
<br>- 1/2 cup prepared Dijon-style mustard
<br>- 1 tablespoon chopped green onion
<br>- 1 dash chili sauce
<br><p></p>Directions
<br>step 1: In a medium bowl, mix together plain non-fat yogurt, honey, prepared Dijon-style mustard, green onion and chili sauce. Chill in the refrigerator approximately 1 hour before serving.

Brussels Sprouts and Chestnuts Recipe

Ingredients
<br>- 3 cups Brussels sprouts
<br>- 1 cup chestnuts, peeled
<br>- 1 large oranges, peeled and segmented
<br>- 1/2 cup low fat, low sodium chicken broth
<br>- 1 tablespoon canola oil
<br>- salt and pepper to taste
<br><p></p>Directions
<br>step 1: Preheat oven to 350 degrees F (175 degrees C).
<br>step 2: Trim each sprout by cutting a little piece off the bottom. With a small paring knife, make an X in the top of the sprout. Repeat with all sprouts and place in steamer over 2 inches of boiling water. Steam the sprouts covered for about 10 minutes or until tender.
<br>step 3: Remove sprouts from pot and allow to cool. Cut each sprout in half and place in a casserole dish. Layer the chestnuts on top of the sprouts. Place the oranges on top of the chestnuts. If using whole roasted chestnuts, follow instructions in step 4
<br>step 4: Add the broth and pour over all ingredients. Drizzle the casserole with oil. Grind in pepper and salt. Bake for 15 minutes or until oranges are soft.
<br>step 5: To roast whole chestnuts:  Mark an X on the rounded side of each chestnut with a pairing knife. Place all the chestnuts on a baking sheet, and roast in the oven for about 30 minutes or until soft. Let cool. Peel, trying to keep the chestnuts as whole as possible.

Tropical Vacation Sundaes Recipe

Ingredients
<br>- 1 (15 ounce) can mangoes in light syrup, drained, reserving syrup
<br>- 2 tablespoons chopped crystallized ginger
<br>- 2 tablespoons rum or reserved mango syrup
<br>- 1 teaspoon lemon or lime juice
<br>- 1 pint banana ice cream or other tropical flavor ice cream or sorbet
<br>- 1/4 cup canned flaked coconut, toasted until golden in a 350 degrees F oven
<br><p></p>Directions
<br>step 1: In small bowl, combine mangoes, 2 tablespoons reserved mango syrup, crystallized ginger, rum and lemon juice.
<br>step 2: Place scoops of the ice cream into 4 dessert dishes.  Spoon mango mixture over ice cream.  Sprinkle with coconut.

Orange Spiced Krumkake Recipe

Ingredients
<br>- 1 cup white sugar
<br>- ½ cup butter, softened
<br>- 2  eggs
<br>- 1 teaspoon orange zest
<br>- ¼ teaspoon ground cloves
<br>- ¼ teaspoon ground cardamom
<br>- 1 ½ cups all-purpose flour
<br>- 1 cup milk
<br><p></p>Directions
<br>step 1: In a medium bowl, cream together the butter, sugar, orange peel and eggs. Sift together the flour, cloves and cardamom. Add the dry ingredients to the creamed mixture alternately with the milk. Mix until batter is completely smooth.
<br>step 2: Grease the krumkake iron with oil or vegetable spray. Heat iron over medium low heat. You only need to grease the iron once.
<br>step 3: Place one tablespoon of batter at a time onto the center of the iron, close, and hold firmly. Cook for 15 to 20 seconds, turning iron over halfway through.  Remove krumkake from iron and roll into a cone. Repeat with the rest of the batter.
