Tropical Salsa with Grilled Mango Recipe

Ingredients
<br>- 1 ripe mango, peeled and sliced 1/4 inch thick
<br>- 2 teaspoons olive oil
<br>- 1/4 cup finely chopped red onion
<br>- 2 tablespoons finely chopped red bell pepper
<br>- 1 jalapeno pepper, finely chopped
<br>- 1 lime, juiced
<br>- 2 teaspoons white sugar
<br>- 1/2 teaspoon salt
<br>- 1/2 teaspoon ground ginger
<br><p></p>Directions
<br>step 1: Preheat an outdoor grill for high heat. In a mixing bowl, toss mango slices with oil to coat.
<br>step 2: Lightly oil grate, place mango slices on grill. Cook for 4 minutes on each side, until nicely browned with grill marks.
<br>step 3: Remove mango from grill, cut into small cubes, and transfer to a mixing bowl. Stir in onion, red pepper, jalapeno pepper, lime juice, salt, sugar, and ginger. Serve at room temperature, chill until ready to serve, or serve hot by heating through in a nonstick skillet.

Ingredients
<br>- 1 2/3 cups granulated sugar
<br>- 3/4 cup butter or margarine, melted
<br>- 2 tablespoons water
<br>- 2 large eggs
<br>- 2 teaspoons vanilla extract
<br>- 1 1/3 cups all-purpose flour
<br>- 3/4 cup NESTLE® TOLL HOUSE® Baking Cocoa
<br>- 1/2 teaspoon baking powder
<br>- 1/4 teaspoon salt
<br>- 3/4 cup chopped nuts
<br>- powdered sugar
<br><p></p>Directions
<br>step 1: PREHEAT oven to 350 degrees F. Grease 13x9-inch baking pan.
<br>step 2: COMBINE sugar, butter and water in large bowl. Stir in eggs and vanilla extract. Combine flour, cocoa, baking powder and salt in medium bowl; stir into sugar mixture. Stir in nuts. Spread into prepared baking pan.
<br>step 3: BAKE for 18 to 25 minutes or until wooden pick inserted in center comes out slightly sticky. Cool completely in pan on wire rack. Sprinkle with powdered sugar. Cut into bars.

Ingredients
<br>- 1 (8 ounce) package egg noodles
<br>- 1 tablespoon margarine
<br>- 1 pound ground beef chuck
<br>- 2 (8 ounce) cans tomato sauce
<br>- 1 cup cottage cheese
<br>- 1 (8 ounce) package cream cheese, softened
<br>- 1/4 cup sour cream
<br>- 1/3 cup chopped green onions
<br>- 1 tablespoon finely chopped green bell pepper
<br>- 2 tablespoons margarine, melted
<br><p></p>Directions
<br>step 1: Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
<br>step 2: Heat 1 tablespoon margarine in a large heavy skillet over medium-high heat. Cook ground beef until evenly brown. Stir in tomato sauce; remove from heat. In a medium bowl, combine cottage cheese, cream cheese, sour cream, green onion and green pepper.
<br>step 3: Spread 1/2 the cooked noodles in the casserole dish. Cover with cheese mixture, then the remaining noodles. Pour melted margarine over the noodles. Spoon meat sauce on  top and spread to cover noodles.
<br>step 4: Bake in preheated oven for 30 minutes.

Blackened Oyster and Shrimp Fondeaux Recipe

Ingredients
<br>- 2 tablespoons butter
<br>- 2 tablespoons all-purpose flour
<br>- 1/4 cup chopped onion
<br>- 1 cup shrimp stock
<br>- 1/2 cup dry white wine
<br>- 1 pinch cayenne pepper
<br>- 1 teaspoon salt
<br>- 1 cup heavy cream
<br>- 2 tablespoons butter
<br>- 4 large uncooked shrimp, peeled
<br>- 4 shucked oysters
<br>- 1/2 teaspoon Cajun-style blackened seasoning
<br>- 1 cup chopped fresh spinach
<br>- 4 fresh mushrooms, sliced
<br>- 2 ounces fresh lump crabmeat (optional)
<br>- 2 tablespoons chopped green onion
<br>- 4 ounces shredded Monterey Jack cheese
<br><p></p>Directions
<br>step 1: Melt 2 tablespoons of butter in a saucepan over medium heat. Whisk in flour and onion, and cook until onion is tender, stirring constantly. Gradually whisk in the shrimp stock and white wine, stirring until smooth. Season with cayenne pepper and salt, and bring to a simmer. Simmer for 5 minutes, then stir in cream and remove from heat.
<br>step 2: Preheat the oven's broiler.
<br>step 3: Melt remaining butter in a skillet over medium heat. Season the shrimp and oysters with blackened seasoning, and saute in butter for about 2 minutes. Add the spinach, mushrooms, crabmeat and green onion, and cook until softened, stirring frequently. Transfer to a baking dish, and stir in the cream sauce. Top with shredded cheese.
<br>step 4: Place under the broiler, and cook until cheese is melted. Serve immediately.

Marinated Cheese Recipe

Ingredients
<br>- 1/2 cup olive oil
<br>- 1/2 cup white wine vinegar
<br>- 1 (2 ounce) bottle diced pimento, drained
<br>- 3 tablespoons chopped fresh parsley
<br>- 3 tablespoons minced green onions
<br>- 3 cloves garlic, minced
<br>- 1 teaspoon sugar
<br>- 3/4 teaspoon dried basil
<br>- 1/2 teaspoon salt
<br>- 1/2 teaspoon ground black pepper
<br>- 1 (8 ounce) package Cheddar cheese
<br>- 1 (8 ounce) package cream cheese, cold
<br><p></p>Directions
<br>step 1: In a jar with a tight fitting lid, combine the olive oil, wine vinegar, pimento, parsley, green onion, garlic, sugar, basil, salt and pepper. Shake vigorously to blend. Set aside.
<br>step 2: Cut the block of Cheddar cheese in half lengthwise. Cut crosswise into 1/4 inch slices to form squares. Repeat with cream cheese. Arrange cheese squares alternately in a shallow baking dish with slices standing on edge. You can arrange in a single long row, or 2 parallel rows depending on the size of your dish. Pour the marinade from the jar over the cheese slices, cover and refrigerate for at least 6 hours, or overnight.
<br>step 3: To serve, remove slices to a serving platter so they are still arranged in an alternating pattern. Spoon some of the extra marinade over the cheese, and serve with crackers.
