Apple-Onion Smoked Chicken Recipe

Ingredients
<br>- 1 Tyson® Fresh Young Chicken
<br>- Apple wood chips, soaked in water
<br>- 1 teaspoon onion salt, divided
<br>- 1/2 small apple, cored and cut into 8 wedges
<br>- 1 small onion, quartered
<br>- 1 quart apple juice (optional)
<br>- 1 slow-cook smoker
<br><p></p>Directions
<br>step 1: PREP: Soak wood chips in water for at least 30 minutes; drain. Heat smoker according to manufacturer's directions. CLEAN: Wash hands. Remove giblets from chicken and discard or freeze for future use. Sprinkle inside of chicken with 1/2 teaspoon onion salt. Place apple wedges and onion in cavity of chicken. Sprinkle outside of chicken with remaining onion salt. CLEAN: Wash hands. Add soaked wood chips to smoker according to manufacturer's directions. Place apple juice in water pan of smoker. Add water to proper level.
<br>step 2: COOK: Place chicken on cooking grill. Cover. Cook 5 to 6 hours or until leg moves easily in joint and internal juices run clear. (Or insert instant-read meat thermometer in thickest part of chicken. Temperature should read 180 degree F.) Do not remove smoker lid before minimum time has passed.
<br>step 3: SERVE: Remove chicken from smoker. Discard apple and onion. Cut chicken into serving pieces. Serve with corn on the cob and carrot salad, if desired.
<br>step 4: CHILL: Refrigerate leftovers immediately.
