Banana Fritters III Recipe

Ingredients
<br>- 2 quarts oil for frying
<br>- 1 cup all-purpose flour
<br>- 1 1/4 teaspoons baking powder
<br>- 1/4 teaspoon salt
<br>- 1 egg, beaten
<br>- 2 cups milk
<br>- 2 teaspoons canola oil
<br>- 3 bananas, mashed
<br>- 1 tablespoon lemon juice
<br>- 2 tablespoons confectioners' sugar

<br>step 1: Heat oil in deep-fryer to 375 degrees F (190 degrees C).
<br>step 2: In a large bowl, mix flour, baking powder and salt.
<br>step 3: In a medium bowl, mix egg, milk and canola oil. Stir into the flour mixture. Mix in bananas and lemon juice. When thoroughly mixed, form mixture into about 10 balls.
<br>step 4: In batches, fry balls in the prepared oil 5 minutes, or until lightly browned. Drain on paper towels, and sprinkle with confectioners' sugar.
