Black Bean, Barley and Turkey Chili Recipe

Ingredients
<br>- 2 tablespoons olive oil
<br>- 1 cup chopped onions
<br>- 1/2 cup chopped green pepper
<br>- 1 tablespoon chili powder
<br>- 2 cloves garlic, minced
<br>- 1/2 teaspoon ground cumin
<br>- 1/4 teaspoon ground oregano, crumbled
<br>- 1/4 teaspoon salt (optional)
<br>- 1 pound ground turkey
<br>- 1 1/2 cups canned vegetable juice
<br>- 1 (14.5 ounce) can diced tomatoes and green chiles
<br>- 1 cup chicken broth
<br>- 1/2 cup quick-pearled Quaker barley
<br>- 1 (15 ounce) can black beans, undrained
<br><p></p>Directions
<br>step 1: Place oil, onions, green pepper, chili powder, garlic, cumin, oregano and salt in a large (2-3 quart) nonstick saucepan or Dutch oven on medium-high heat.  Cook, stirring frequently, for 3-4 minutes or until tender.
<br>step 2: Add turkey and cook, stirring to break up meat for 5 minutes or until cooked through.  Add vegetable juice, tomatoes, chicken broth and barley.  Increase heat to bring to a boil.  Reduce heat to medium-low, cover and cook, stirring occasionally, for 15 minutes.  Add beans, cover and cook 10 minutes.
