Buttermilk Pie with Shortbread Crust Recipe

Ingredients

<br>- 1/4 cup light butter
<br>- 3/4 cup granulated sugar
<br>- 3/4 cup granular sucrolose sweetener (such as Splenda®)
<br>- 1/2 cup non-fat dry milk
<br>- 4 tablespoons all-purpose flour
<br>- 1 egg yolk
<br>- 1 1/2 teaspoons lemon extract
<br>- 1 cup nonfat buttermilk
<br>- 1 egg whites, beaten until foamy, but not dry

<br>step 1: Preheat the oven to 325 degrees F. In a mixing bowl, combine all ingredients for the crust. Press into a 9-inch non-stick pie pan. Set aside.
<br>step 2: Cream together the butters with the sugar and Splenda in electric mixer bowl until light and creamy. Add the non-fat dry milk to the butter and mix; beat well.
<br>step 3: Adding one at a time and mix well after each addition, add flour, egg yolk, lemon extract, and buttermilk.
<br>step 4: Fold in the beaten egg whites.
<br>step 5: Pour the filling into the pie shell. Bake for 45 minutes, until pie is firm in center.
