Dark Carrot Raisin Muffins Recipe

Ingredients
<br>- 2 cups whole wheat flour
<br>- 1/2 cup all-purpose flour
<br>- 1/8 teaspoon salt
<br>- 2 teaspoons baking powder
<br>- 1/4 teaspoon ground nutmeg
<br>- 1/4 teaspoon ground cloves
<br>- 1/4 teaspoon ground cinnamon
<br>- 2 eggs
<br>- 1 cup buttermilk
<br>- 1/4 cup vegetable oil
<br>- 2 tablespoons applesauce
<br>- 1/2 cup honey
<br>- 1 1/2 cups shredded carrots
<br>- 2/3 cup raisins

<br>step 1: Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper muffin liners.
<br>step 2: Stir together whole wheat flour, all-purpose flour, salt, baking powder, nutmeg, cloves and cinnamon. In a separate bowl, stir together eggs, buttermilk, oil, applesauce and honey. Stir egg mixture into flour just until combined. Fold in carrots and raisins. Spoon batter into prepared muffin cups.
<br>step 3: Bake in preheat oven for 18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
