Easy Coconut Rice Recipe

Ingredients

<br>- 1 1/2 cups coconut milk
<br>- 3/4 cup water
<br>- 2 slices fresh ginger root
<br>- 2 teaspoons curry powder
<br>- 1/2 teaspoon salt

<br>step 1: In a medium saucepan, combine rice, onion, coconut milk, water, ginger, curry powder, and salt. Cover, and bring to a boil. Reduce heat, and simmer for 20 to 30 minutes, or until done.
