Easy Sausage-Pasta Soup Recipe
- 2 pounds sweet Italian sausage, casings removed
- 1 cup chopped onion
- 2 (28 ounce) cans stewed tomatoes, chopped
- 3 ½ cups beef broth
- 2 cups water
- ¼ pound salami, cut into strips
- 2 ½ cups rotini pasta
step 1: In a heavy pot over medium heat cook crumbled sausage and onions and drain well.
step 2: Stir in tomatoes, broth, water, and salami, heat to a boil. Reduce heat, cover, and simmer 15 minutes.
step 3: Add rotini, and simmer 15 minutes more or until pasta is done.
