Fruity Tofu Parfait with Granola Recipe
- 1 (12 ounce) package silken tofu
- 3 tablespoons honey
- 2 teaspoons vanilla extract
- 1 cup raspberries
- 1 apple, cored and diced
- ½ cup low fat granola
- 2 tablespoons raisins
step 1: Combine tofu, honey and vanilla in blender or food processor and puree until completely smooth, then transfer to a bowl and stir in raspberries until mixture is slightly pink.
step 2: Layer fruity tofu in serving glasses with apple and granola, top with raisins and serve.
