Ginger Shrimp with Fried Rice Recipe

Ingredients
<br>- 2 2/3 cups water
<br>- 1 1/3 cups uncooked white rice
<br>- 2 tablespoons sesame oil
<br>- 1 tablespoon butter
<br>- 1/4 cup snow peas
<br>- 1/4 cup whole kernel corn, drained
<br>- 3/4 pound cooked shrimp - peeled and deveined
<br>- 1/3 cup orange juice
<br>- 1/4 cup fresh lime juice
<br>- 2 tablespoons minced onion
<br>- 2 teaspoons honey
<br>- 2 teaspoons minced fresh ginger root
<br>- 1 clove minced garlic
<br>- 3/4 cup chicken broth
<br>- 1 teaspoon cornstarch
<br>- 1 teaspoon butter

<br>step 1: In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
<br>step 2: In a large skillet over high heat, add sesame oil and allow it to get hot. Add rice and 1 tablespoon of butter. Saute for three minutes.
<br>step 3: Stir in the snow peas and corn. Saute until rice begins to brown slightly. Add shrimp to top of rice. Reduce heat to low and cover to keep warm.
<br>step 4: In a mixing bowl, whisk together the orange and lime juices, onion, honey, ginger root and garlic. Mix thoroughly. Spoon enough of the mixture to coat the shrimp.
<br>step 5: In a saucepan over high heat, combine the remaining juice mixture with chicken broth and cornstarch. Bring to a boil and reduce heat. Simmer until thickened. Stir in 1 teaspoon of butter. Serve over the rice and shrimp.
