Green Rice I Recipe
- 2 1/2 cups water
- 1 1/4 cups uncooked white rice
- 1 (10 ounce) package spinach, chopped
- 1 egg
- 1 (12 fluid ounce) can evaporated milk
- 1 cup shredded Cheddar cheese
step 1: Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 2 quart casserole dish.
step 2: In a saucepan, combine water and rice, and bring to a boil. Reduce heat, cover, and simmer for 20 minutes. Remove from heat, and stir in the spinach, egg, evaporated milk, and cheese. Spoon into the prepared casserole dish.
step 3: Bake for 30 minutes in the preheated oven, or until middle is set.
