Low Fat Apple Bran Muffins Recipe

Ingredients
<br>- 1 1/2 cups wheat bran
<br>- 1 cup low-fat buttermilk
<br>- 1 cup all-purpose flour
<br>- 1/4 cup packed brown sugar
<br>- 1 teaspoon baking soda
<br>- 2 egg whites
<br>- 1/2 apple, grated

<br>step 1: In a small bowl, combine bran and buttermilk. Set aside to soak for 10 minutes.
<br>step 2: Preheat oven to 350 degrees F (175 degrees C). Lightly grease muffin pan, or use paper liners.
<br>step 3: In a large bowl, mix together flour, brown sugar and baking soda. Stir in bran mixture and egg whites. Fold in grated apple. Divide batter into 12 muffin cups.
<br>step 4: Bake in preheated oven for 16 to 18 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool for 5 minutes before removing from the pan.
