Mango Medley Recipe
- 1 (11.5 fl oz) can Mango KERNS® from LIBBY'S® Refrigerated All Nectar
- 3 tablespoons lime juice
- 4 teaspoons granulated sugar
- 1/4 teaspoon hot pepper sauce
- 2 medium mangoes, peeled and cubed
- 1 medium carrot, peeled and grated
- 1/2 cup thinly sliced red bell pepper strips
- 1/4 cup chopped fresh mint
step 1: COMBINE nectar, lime juice, sugar and hot pepper sauce in small bowl.
step 2: COMBINE mango, carrot, bell pepper and mint in medium bowl. Add nectar mixture; toss well to coat. Refrigerate for 1 hour before serving.
