Mary Anne's Carrot Cake Recipe

Ingredients
<br>- 4 cups ground carrots
<br>- 2 (15 ounce) cans crushed pineapple, drained
<br>- 1 ½ cups vegetable oil
<br>- 3 cups white sugar
<br>- 6  eggs
<br>- 2 teaspoons ground cinnamon
<br>- 1 teaspoon ground nutmeg
<br>- 3 cups all-purpose flour
<br>- 3 teaspoons baking soda
<br>- ¼ teaspoon salt
<br>- 1 ½ cups raisins

<br>step 1: Preheat oven to 375 degrees F (190 degrees C). Grease and flour two 10 inch Bundt pans. Sift together flour, baking soda and salt. set aside.
<br>step 2: In a large bowl, combine carrots, pineapple, oil and sugar. Add eggs, cinnamon and nutmeg. Add flour mixture and mix well. Stir in raisins.
<br>step 3: Pour into prepared greased and floured pans. Bake for 45 minutes, or until a toothpick inserted into the cake comes out clean. Allow to cool, then frost with cream cheese frosting.
