Mini Coffee Cakes Recipe
Ingredients
- 1/3 cup butter or margarine, softened
- 1/4 cup sugar
- 1 egg
- 1 1/2 cups all-purpose flour
- 1 (3.4 ounce) package instant vanilla pudding mix
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 1/4 cups milk
- 1/2 cup chopped walnuts
- TOPPING:
- 1/2 cup chopped walnuts
- 1/3 cup packed brown sugar
- 2 tablespoons butter or margarine, melted
- 1/4 teaspoon ground cinnamon
Directions
step 1: In a mixing bowl, cream the butter and sugar. Beat in egg.
step 2: Combine the flour, pudding mix, baking powder and salt; add to the creamed mixture alternately with milk. Beat until blended. Stir in walnuts. Fill paper-lined muffin cups two-thirds full.
step 3: Combine topping ingredients; sprinkle over batter.
step 4: Bake at 375 degrees for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack.
