Orange-Drizzled Pumpkin Brownies Recipe
- Non-stick cooking spray
- 2 1/2 cups all-purpose flour
- 1 (15 ounce) can pumpkin
- 1 1/2 cups granulated sugar
- 1/2 cup vegetable oil
- 2 eggs, lightly beaten
- 1/4 cup fat free milk
- 2 teaspoons baking powder
- 2 teaspoons pumpkin pie spice
- 1 teaspoon salt
- 1/2 cup dried cranberries or raisins
- 1/2 cup chopped walnuts (optional)
- 1 cup powdered sugar
- 2 tablespoons orange juice
step 1: Heat oven to 375 degrees F. Lightly coat 15 1/2 x 10 1/2 -inch baking pan with cooking spray.
step 2: In large bowl, combine flour, pumpkin, sugar, oil, eggs, milk, baking powder, pumpkin pie spice and salt; mix until just blended. Stir in cranberries and walnuts, if desired. Spread evenly into prepared pan.
step 3: Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack.
step 4: In small bowl, combine powdered sugar and 1 tablespoon of the orange juice; mix until smooth, adding additional orange juice, as needed, to reach desired consistency. Drizzle over brownies; cut into squares. Store loosely covered.
