Orange Apricot Loaf Recipe

Ingredients
<br>- 1/2 cup sultana raisins, chopped
<br>- 1/4 cup dried apricots, chopped
<br>- 1 tablespoon orange zest
<br>- 2 tablespoons orange juice
<br>- 3 tablespoons butter, softened
<br>- 1/2 cup white sugar
<br>- 1 egg
<br>- 2 cups self-rising flour
<br>- 3/4 cup milk

<br>step 1: Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan. In a small bowl, combine sultanas, apricots, orange rind and orange juice. Let stand for 10 minutes.
<br>step 2: In a large bowl, cream butter and sugar together. Beat in egg. Stir in fruit. Stir in flour alternately with milk. Pour batter into prepared pan.
<br>step 3: Bake in preheated oven for 40 to 45 minutes, or until toothpick inserted into center of loaf comes out clean.
