Orange Cookies II Recipe
Ingredients
- ¾ cup white sugar
- ¾ cup shortening
- 1 egg
- 1 cup cooked grated carrots
- 2 cups sifted all-purpose flour
- ½ teaspoon salt
- 2 teaspoons baking powder
- ½ large orange, juiced
- 1 tablespoon orange zest
- ⅓ cup confectioners' sugar for decoration
Directions
step 1: Preheat oven to 375 degrees F (190 degrees C).
step 2: Cook the grated carrots in enough water to cover. Boil until just soft and drain. Do not over cook!
step 3: Cream the shortening and sugar together. Add the egg and mix well. Stir in the cooked carrots while still warm.
step 4: Add the sifted flour, salt and baking soda and mix to combine.
step 5: Drop by teaspoonfuls onto parchment paper lined baking sheets and bake at 375 degrees F (190 degrees C) for 12 minutes. Let cool then frost with Orange Icing.
step 6: To Make Orange Icing: Add enough confectioners' sugar to the orange juice and orange zest to make a spreading consistency. Spread icing over cooled cookies and let dry.
