Orange Cookies II Recipe

Ingredients
<br>- ¾ cup white sugar
<br>- ¾ cup shortening
<br>- 1  egg
<br>- 1 cup cooked grated carrots
<br>- 2 cups sifted all-purpose flour
<br>- ½ teaspoon salt
<br>- 2 teaspoons baking powder
<br>- ½ large orange, juiced
<br>- 1 tablespoon orange zest
<br>- ⅓ cup confectioners' sugar for decoration
<br><p></p>Directions
<br>step 1: Preheat oven to 375 degrees F (190 degrees C).
<br>step 2: Cook the grated carrots in enough water to cover. Boil until just soft and drain. Do not over cook!
<br>step 3: Cream the shortening and sugar together. Add the egg and mix well. Stir in the cooked carrots while still warm.
<br>step 4: Add the sifted flour, salt and baking soda and mix to combine.
<br>step 5: Drop by teaspoonfuls onto parchment paper lined baking sheets and bake at 375 degrees F (190 degrees C) for 12 minutes. Let cool then frost with Orange Icing.
<br>step 6: To Make Orange Icing: Add enough confectioners' sugar to the orange juice and orange zest to make a spreading consistency. Spread icing over cooled cookies and let dry.
