Pinto Bean Pie I Recipe

Ingredients
<br>- 1 cup cooked pinto beans with juice
<br>- 4  eggs, room temperature
<br>- 3 cups white sugar
<br>- 1 tablespoon vanilla extract
<br>- 1 cup butter, melted
<br>- 1 cup flaked coconut
<br>- 2 (9 inch) deep dish frozen pie crusts, thawed

<br>step 1: Preheat oven to 325 degrees F (165 degrees C).
<br>step 2: Mash beans until very smooth; set aside. In a large bowl, beat eggs; mix in beans, sugar, vanilla, melted butter or margarine, and coconut until well blended. Pour filling into two pie crusts.
<br>step 3: Bake until filling is set, about 1 hour.
