Possum Pie Recipe
- 3 egg whites
- 30 butter crackers, crushed
- 1 teaspoon vanilla extract
- ¾ cup white sugar
- 1 cup chopped walnuts
- 1 (12 ounce) container frozen whipped topping, thawed
- 2 tablespoons flaked coconut
step 1: Preheat oven to 325 degrees F (165 degrees C).
step 2: In a large bowl, whip egg whites until stiff peaks form. Fold in crackers, vanilla, sugar and nuts.
step 3: Spread evenly into 9 inch pie pan. Bake at 325 degrees F (165 degrees C) for 20 minutes. Cool completely.
step 4: Spread whipped topping over pie, then sprinkle with coconut.
