Potato Puff Casserole Recipe

Ingredients
<br>- 1 small onion, chopped
<br>- 2 tablespoons butter or margarine
<br>- 1/2 cup milk
<br>- 1/2 teaspoon ground mustard
<br>- 1/4 teaspoon salt
<br>- 1/8 teaspoon pepper
<br>- 2 cups mashed potatoes (prepared with milk and butter)
<br>- 2 eggs, separated
<br>- 1 cup shredded Cheddar cheese (optional)

<br>step 1: In a skillet, saute onion in butter until tender. Stir in milk, mustard, salt and pepper; bring to a boil. Remove from the heat; stir in potatoes and mix well. Stir in egg yolks until smooth. Cool at room temperature for 15 minutes. Stir in the cheese if desired.
<br>step 2: In a small mixing bowl, beat egg whites until soft peaks form. Fold into the potato mixture. Spoon into a greased 1-qt. baking dish.
<br>step 3: Bake at 350 degrees for 40-45 minutes or until puffed and lightly browned. Yield: 6 servings.
