Ricotta Cheese Pie I Recipe
- 1 ½ cups ricotta cheese
- 2 eggs
- 1 teaspoon vanilla extract
- ½ cup white sugar
- 1 ½ cups milk
- 2 tablespoons cornstarch
- 1 recipe pastry for a 9 inch single crust pie
- ½ teaspoon ground cinnamon
step 1: Dissolve cornstarch in 1/2 cup milk.
step 2: Combine cornstarch and milk with ricotta, remaining 1 cup milk, eggs, vanilla, and sugar. Mix until well blended. Pour filling into unbaked pie shell.
step 3: Bake at 350 degrees F (175 degrees C) for 1 hour, or until a knife inserted into center comes out clean. Sprinkle top with cinnamon, and cool.
