Ricotta Cheese Pie I Recipe

Ingredients
<br>- 1 ½ cups ricotta cheese
<br>- 2  eggs
<br>- 1 teaspoon vanilla extract
<br>- ½ cup white sugar
<br>- 1 ½ cups milk
<br>- 2 tablespoons cornstarch
<br>- 1 recipe pastry for a 9 inch single crust pie
<br>- ½ teaspoon ground cinnamon
<br><p></p>Directions
<br>step 1: Dissolve cornstarch in 1/2 cup milk.
<br>step 2: Combine cornstarch and milk with ricotta, remaining 1 cup milk, eggs, vanilla, and sugar.  Mix until well blended.  Pour filling into unbaked pie shell.
<br>step 3: Bake at 350 degrees F (175 degrees C) for 1 hour, or until a knife inserted into center comes out clean.  Sprinkle top with cinnamon, and cool.
