Rocky Mountain Grilled Shrimp Recipe

Ingredients
<br>- 2 pounds unpeeled jumbo fresh shrimp
<br>- 1/2 cup lime juice
<br>- 1/3 cup olive oil
<br>- 2 tablespoons chopped fresh cilantro
<br>- 1 clove garlic, minced
<br>- 1 jalapeno pepper, seeded and chopped
<br>- 1/4 teaspoon salt
<br>- 1/4 teaspoon pepper

<br>step 1: PEEL shrimp, leaving tails intact, and devein, if desired. Combine lime juice and remaining ingredients; pour over shrimp.
<br>step 2: COVER and chill 2 hours. Remove shrimp, discarding marinade. Thread shrimp on skewers.
<br>step 3: GRILL, without grill lid, over medium-hot coals (350 to 400 degrees) 3 minutes on each side or until done.
