Shortcut Minestrone Soup Recipe

Ingredients
<br>- 2 quarts water
<br>- 2 (14.5 ounce) cans diced tomatoes, undrained
<br>- 1 (10 ounce) package frozen chopped spinach
<br>- 1 (10 ounce) package frozen BOCA Meatless Italian Sausage, cut into 1/2-inch slices
<br>- 2 medium carrots, sliced
<br>- 1 medium onion, chopped
<br>- 1 cup bow tie pasta, uncooked
<br>- Grated Parmesan cheese (optional)

<br>step 1: PLACE all ingredients except Parmesan cheese into stock pot or large Dutch oven.
<br>step 2: BRING to a boil on medium-high heat, stirring occasionally. Reduce heat to medium-low; simmer 15 minutes or until carrots are tender, stirring occasionally.
<br>step 3: SERVE sprinkled with Parmesan cheese, if desired.
