Simple Sausage Potato Pancakes Recipe

Ingredients
<br>- 2 large red potatoes, peeled, quartered
<br>- 1/2 small onion
<br>- 1/4 cup cholesterol-free egg product
<br>- 1 tablespoon flour
<br>- 1/2 teaspoon salt
<br>- 2 frozen BOCA Meatless Breakfast Patties, quartered
<br>- 2 teaspoons vegetable oil, divided
<br><p></p>Directions
<br>step 1: PLACE potatoes, onion, egg product, flour and salt into blender container; cover.  Blend until smooth. Add breakfast patty pieces; cover. Blend an additional 5 to 10 seconds.
<br>step 2: HEAT 1 tsp. of the oil in nonstick skillet on medium heat. Add potato mixture to hot skillet to form 8 pancakes, using 1/4 cup of the potato mixture for each pancake.
<br>step 3: COOK 3 minutes on each side or until golden brown on both sides, adding remaining oil as necessary.
