Southwestern Eggs Recipe

Ingredients
<br>- 4 (6 inch) corn tortillas
<br>- 1/4 teaspoon salt
<br>- 1 cup drained canned seasoned black beans
<br>- 2/3 cup chopped tomato
<br>- 1 tablespoon sliced green onions
<br>- 1 teaspoon chili powder
<br>- 2 eggs, poached
<br>- 2 tablespoons mild salsa
<br>- 2 tablespoons light sour cream
<br>- 2 teaspoons chopped fresh cilantro

<br>step 1: CUT each tortilla into 6 wedges. Place wedges in a single layer on a baking sheet; sprinkle with salt.
<br>step 2: BAKE at 350 degrees for 6 minutes or until crisp. Set aside.
<br>step 3: COOK beans and next 3 ingredients in a saucepan over medium heat 5 minutes, or until thoroughly heated; keep warm.
