Sunshine Pineapple Cookies Recipe

Ingredients
<br>- 1 cup butter
<br>- 1 ½ cups white sugar
<br>- 1  egg
<br>- 2 tablespoons vanilla extract
<br>- 1 (20 ounce) can crushed pineapple, with juice
<br>- ½ cup chopped pecans
<br>- 3 ½ cups all-purpose flour
<br>- ½ teaspoon salt
<br>- ¼ teaspoon ground nutmeg
<br>- 1 teaspoon baking soda

<br>step 1: Cream together butter or margarine, sugar,  egg, and vanilla.
<br>step 2: Add crushed pineapple with juice and chopped pecans.  Sift together flour with salt,  nutmeg and baking soda.
<br>step 3: Drop by tablespoonfuls (if there is any left at this point) onto greased cookie sheet 2 1/2 inches apart.  Bake at 350 degrees F (175 degrees C) 10-15 minutes or until lightly golden brown. Cool.
