Sweetheart Cookie Sandwiches Recipe

Ingredients
<br>- ¼ cup shortening
<br>- ¼ cup butter
<br>- 1 cup white sugar
<br>- 1  egg
<br>- ¼ teaspoon peppermint extract
<br>- 2 cups all-purpose flour
<br>- ½ teaspoon baking powder
<br>- ½ teaspoon salt
<br>- 3 tablespoons milk
<br>- 1 cup rolled oats
<br>- 2 drops red food coloring
<br>- 1 (16 ounce) container prepared chocolate frosting
<br><p></p>Directions
<br>step 1: In a large bowl, beat together shortening, butter or margarine and sugar until light and fluffy. Add egg and peppermint extract; beat well.
<br>step 2: Sift together flour, baking powder and salt; add to shortening mixture alternating with milk and mix well. Stir in oats; add in just enough food coloring to make a pink dough. Cover and chill for 1 hour.
<br>step 3: Preheat oven to 375 degrees F (190 degrees C).
<br>step 4: Roll out dough on a lightly floured board; cut out cookies with a floured 2 inch cookie cutter. Place on a lightly greased cookie sheet.
<br>step 5: Bake in preheated oven for about 6 minutes. Remove cookies from sheet to cool.
<br>step 6: Frost half of the cookies with frosting; top with remaining cookies, sandwich style.
