Tarragon Vegetables Recipe
- 1/4 cup olive oil
- 2 tablespoons tarragon vinegar
- 1 clove garlic, crushed
- 1/4 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 large yellow squash
- 1 large zucchini
- 1 large green bell pepper
- 1 large yellow bell pepper
- 1 large red bell pepper
- 3/4 pound medium-size fresh mushrooms
step 1: WHISK together first 6 ingredients in a large bowl.
step 2: CUT yellow squash and zucchini into 3/4 inch slices and bell peppers into 1-inch squares. Add squash, zucchini, bell peppers, and mushrooms to oil mixture. Let stand 1 hour, tossing occasionally.
step 3: DRAIN vegetables, discarding marinade, and thread alternately onto skewers.
step 4: GRILL, covered with grill lid, over medium-hot coals (350 to 400 degrees) 5 to 7 minutes on each side or until tender.
