- 2 pounds beef stew meat, cut into 1/2 inch pieces
- 1 small red onion, diced
- 1 medium green bell pepper, seeded and diced
- 2 fresh tomatoes, diced
- 1 green chile pepper, seeded and diced (optional)
- 1/2 teaspoon chile paste
step 1: Preheat the oven to 350 degrees F (175 degrees C).
step 2: Place the beef into a 1 quart glass baking dish. Mix in the red onion, green pepper, tomato, and if using, the chile pepper. Blend in the chile paste by hand.
step 3: Cook, uncovered, for 30 to 45 minutes in the preheated oven, or until the meat is no longer pink. Serve hot with flatbread, or wrapped in a pita.
