Zucchini Linguine Recipe

Ingredients
<br>- 1 (8 ounce) package linguine pasta
<br>- 1 tablespoon olive oil
<br>- 2 cloves garlic, minced
<br>- 3 zucchini, shredded
<br>- 1/4 cup shredded Cheddar cheese
<br>- 1/4 cup plain nonfat yogurt
<br>- salt and pepper to taste

<br>step 1: Bring a large pot of lightly salted water to a boil.  Add pasta and cook for 8 to 10 minutes or until al dente; drain.
<br>step 2: Meanwhile, heat oil in a large skillet over medium heat.  Saute garlic until it starts to brown.  Stir in a handful of grated zucchini;  cook for 1 minute and then add the rest of the zucchini.  Cook for 3 minutes.
<br>step 3: Toss pasta with zucchini, cheese and yogurt.  Season with salt and pepper.  Mix well and serve.
